I wonder if the practice is named after the duck, which was probably butchered in this fashion.

Perhaps from Old French guaroc "club, stick, rod, shaft of a crossbow," probably ultimately Celtic, but possibly from Frankish *wrokkan "to twist" (cognate with Middle Dutch wroken "to twist").

I'd say no to both hypotheses here. They don't appear etymologically related, and I can't really see anyone taking such pains to kill a duck.
