According to Wiktionary, the singular is either cannolo (Italian) or cannolu (Sicilian).
I checked a few other sources and it looks to be that way. I've sent a message to Etymonline to let them know. Good catch.

The wik has it as a singular flat out.
Etymonline’s entry suggests cannola is Italian only
(and not for the pastry).
And the OED admits solely of the plural.

I’m tellin’ granma!
